Lemongrass Chicken Salad


Hello. 

Its been a while since I last updated my blog and then again I feel like noting down the recipe of Lemongrass chicken of my grandma. :)

Don't really remember when was the last time did I make the Lemongrass chicken marinade and I actually lost the recipe my grandma taught me. I also can't get it online even though I tried to surf through blogs. So I tried to make it my own and I so I'm here to note down before I forget about it and try really hard to figure out which ingredients I need again sometimes soon in the future? XD 

So I added 5 stalks of Lemongrass for 3 chicken thighs, five big shallots, 8 cloves of garlic, a dash of white pepper powder, a pinch of salt, two tablespoon of oyster sauce, a tablespoon of fish sauce and a tablespoon of soy sauce.

I cut all the ingredients into small pieces because I don't have special blender for the paste and I blend the paste with a quarter cup of water. I tried to add the least water I can so the paste will not be too runny. :) After I get the paste done then I added the seasoning and marinade the chicken overnight. :) 

I fried the Lemongrass Chicken with two tablespoons of flour and one tablespoon of corn starch. 

I also made a Thai style salad and added my Lemongrass chicken into it so it taste like healthier :P 

I've added Coriander or Cilantro, Mint Leaves, Scallions or Green Onions, Shallots, Japanese Cucumber, fish sauce, Lime juice,Thai palm sugar and Thai Chili powder. I cut every kind of vegetables I can and mix it up with the Lime juice and seasonings.

After all then the Lemongrass chicken salad is ready!
